Is it possible to create a new template and apply it to existing classes?

Not yet. In the current version it will always create a new class.
We'll add this option in our next major update.

If the template doesn't have complex relations between tabs (i.e. linked columns) you can easilty copy a tab from the template into a preexisting class. Tap&hold on a tab then copy
