Pierre-Ettienne, if you have a chance, do the following: 
iPad Settings > iDoceo > Enable Moodle debug mode
Now try to connect to your Moodle server from iDoceo's Settings  >Cloud Links

Once failed you will be able to send me a log file (no personal data is included here)
Please send it to support @ idoceo.net
and I'll see what I can do

Before I go exploring for hours, I wanted to ask if we're constrained to use the Moodle implementation of a grade book. I assume yes. So if I were to use my present iDoceo grade book categories and grading scales, I would first have to see if there's an equivalent in Moodle and, if so, rename my categories and scales. Am I correct?

No, it is much easier than that:

- iDoceo's gradebook has nothing to do with Moodle's and there is no need to.
- You can load data from Moodle's gradebook columns into iDoceo if they appear in the Add column > Moodle dialog
- You can only send data from iDoceo into 'Assign' tasks in Moodle. Nothing else is allowed by Moodle.

There is one special case that didn't work for me.

Sometimes I use the workshop activity: docs.moodle.org/402/en/Workshop_activity .

By default, students can receive a maximum of 80 points for their own submission and 20 points for assessing other submissions. However, when I download the results in iDoceo, I only receive the 80 points for the students' own submissions.

That information is hidden by Moodle's API but I've got a patch in Beta.
I'm not sure if you are receiving Beta invitations but I'll send you a new one.
Once you install our Beta version enable this option shown below and then try to
load the workshop task data again. Let me know how that works for you
