Is there an undo button - it is really easy to accidentally delete sections of stuff if you have big thumbs like I do. Have the tech boffins there got an undo function in place

Yes, there is a big undo button on the top bar of the gradebook.
You can't delete anything accidentally, it always asks for confirmation.
Even if you do, you can restore students, tabs, columns, classes and grade types from iDoceo's Recycle bin.

Yeh I should have been a bit more precise in my description.
I use the notation function for each student to record their behaviours - it is quite easy to delete things when in highlight mode - never quite worked out what I am touching when it does it but I would like to be able to return the document to the previous state before the blunder - the undo button on the gradebook page has no functionality in this situation and there is no warning before doing the deleting.
Please see the screen shot below for where I am talking about.
Thanks
Greg

Not sure where you are touching either but we'll keep an eye on it.
In order to undo changes in the annotations tap outside the window and then tap on Cancel (the big ok button will turn red)

Nup - that didn't rectify my problem.
Try doing the following and you will see what I mean.
- open an annotation
- type some text in then highlight and cut some of it
- presuming you did not wish to cut that text then clicking of the annotation and bringing up the cancel button does not bring the accidentally cut text back again.
By the way I am in no way whinging about your product - the adopting of idoceo along with google classroom into our schooling system is the greatest leap forward in education that has occurred in my 35 years in the job.
thanks for your continued attention to our inquiries - the support is great

Noted greg. We'll keep that in mind.
