hello,
i've been trying to find this option and I couldn't. Basically I would like to use conditional formatting but without setting a maximum or minimum, the colour scale going, let's say, from green to yellow to red would depend on the highest and lowest value in that column.
Is it some way of doing it?

I'm afraid you can't do that without specifying the range of values you are working with.
