Backups was created by Shaw
I have used iDoceo for 6 months now and it has been great. I have performed weekly backups to iCloud. Yesterday, my iPad crashed and I had to perform a factory reset. When I tried to restore from iCloud backup iDoceo found no backups. Have I lost 6 months of data, lesson plans, student info? If so, what has caused this? I am now extremely worried about using a product I thought was a huge addition and benefit to my teaching? Any advice you can offer would be hugely appreciated?

Yes, unfortunately when I had to perform a Factory Reset, iTunes automatically updated my iPad to to iOS 8. I'm assuming the problem is to do with the change from iCloud to iCloud drive? I have attempted to downgrade and thus retrieve my backup, but it seems that is not easy to do...

Yes, that is the problem. Apple should internally transfer your backups from iCloud to the new iCloud Drive but it seems they have not.
Give this a try: Open your iPad Settings > iCloud > Storage > Manage Storage > Tap on iDoceo in the list of Documents&Data. This should show the actual contents of iCloud Drive

iDoceo doesn't appear in the list of 'Documents and Data'. It does however show as a subsection of '.....iPad' under 'Backups'(26.0MB worth).
(Just to clarify, iCloud > Storage > Manage Storage >''This iPad' (under Backups Section)
